I been sick twice this month. This cold weather make me sick I have been coughing,sore throat, runny nose and even fever during night time. I hate to be sick because I need to take care my baby, he is depending on me.I hope my son will not take what I got. I don't mind to be sick as long as my baby is healthy. I don't want my little one get sick.

We celebrated our Christmas diningg out and husband went to work. I not bothered to cook anything since only 3 of us in the house.The important thing is that we are happy family.My baby got his presents before Christmas he already opened them. I missed my family back home I wish next Christmas I will be able to celebrate the holidays in the Philippines. Well, I got my gifts that I will treasure, my baby and my husband I cant ask for more.

Even they are kinda old they never forgot to give as presents. They are so sweet couples and help us a lot. They love my baby to death that they are so proud to have a great grandson who is so pretty to their eyes. Matthew's love his toys from granny and grandpa he not even wait for Christmas to open it. I am so thankful of what I got too same with my husband.

Our front porch

Finally, husband built already the rails of our front porch. My son can play the porch safely now. He love to play outside so I can leave him there since its safe now.I am not done painting it though but almost there. We love our new front porch look that we can set and relax while looking to the trees, birds and car passing by. I love the native sofa my father in law gave to us its look good on the porch. I also going to hang flowers and wind chimes, sound like I will enjoy staying outside now. Well, go to go back painting while baby boy sleeping.

I am so tired

Today is been busy day for me. No ending laundry and cleaning messes my baby boy made. I am just happy that I able to do more task same time. I able to watch my son while I am doing my chores. I cooked dinner for my family which I am so happy because hubby love it. Now, its time for me to relax and watch my TFC show. Afterward I will rearrange again the living room because son make his toys everywhere again after I clean, we'll I love him and I don't mind cleaning after him. Good Night Everyone.

I feel bad for her

I am so excited that a friend will stay to our house after new year but same time I am so sad what she been through with her husband. I hope everything will work on her way. I will help her as I can to make everything straight for her. Well,I hope her husband will be better if she is far away. Who knows it will make him realize he need her. We will pray for my friend that she can recover on this crisis on her marriage,she is so young to get through on this situation. I wish her luck and pray for her.

I am looking for job

This week I been so busy looking for job that work on my husband schedules since he work everyday so I need to get a nigh time job so that I can take care our son on weekdays. Well, I am hoping to have a work soon I need it so badly because I want to help my husband to pay bills and help my family back in the Philippines.I want to be productive and able to help. My husband said I don't need to work since he can provide our needs can pay bills by his money but I don't want just to nothing to do in the house.I also want to buy stuff that my own money. Well, wish me luck people.

I miss my family

This holidays for sure is not that memorable for me. I really misses my family in the Philippines I wish I can spend the christmas and new year with them. I know that I have my own family here but celebrating the holidays for only the 3 of us is not that fun. Christmas and new year here is so much different how Filipinos celebrate the holidays. On christmas day and new year my husband need to go work. Oh well, I will try my best that next christmas my son and me will have it in the Philippines.

I baked a chip chocolate cookies today and it almost gone. I am glad my son love it. He is picky but he just love cookies so much.He keep asking for cookies but he ate enough already or else he will be awake all night for too much sugar.My husband captured a picture of our baby boy while eating.

I feel so bad that I forgot to update my blog yesterday I was so busy. I did 6 load of laundry,fold the clothes,clean the house, cooking, washing and more. We ended our weekend at granny and papaw church activity. It was so nice its my first time to see those kind of church activity. We ate free cookies and hot coco while Baby Matt got a teddy bear.And I still have a lot to do like mop the floor ,vacuum the carpet and do more laundry. And later today we need to go for groceries. I guess that's for now I need to put my baby to nap.Have a nice day everyone

Our new dog Trixy

Yes, we got us a husky which hubby and Baby Matt love to death. She is so sweet and calm dog. We got her because She was given away from craiglist, her ex-owner cant keep her anymore because she got another dog that got jealous to Trixy. My husband longing for husky for while so he grabbed to have Trixy. Good thing is she is good dog to keep.My son love her to death even she is as big as his daddy.

What A Lazy Day

As usual its just an ordinary day with my son and me. We woke up late around 11 am, eat brunch and back to bed again..lol..Good thing is that my son love to sleep in this cold weather we took a nap for 4 hours and eat again.The lil one is now so busy playing with his toys while I am busy browsing internet especially FB. Trey will be home in few minutes so I need to get up my ass to cook dinner. I will just cook sausage and some beans for the side. So that's all for now friends. Happy weekend everyone.

Its 25 degrees

Yes, It's freaking cold. My son and I got up so late because we still denied to got up from a warm blanket but we need too I need to feed my baby. Right now I am enjoying my electric blanket on my lap while browsing the web while I just let my baby play with the Christmas tree on and off the light. I am not feeling well to chase him around so I just let him do what he want to do. This cold weather really make me sick and I always suffer a headache now and then. Will I need to put my baby now to take a nap and myself.

My Big Boy

Time flies so fast like how my son grew up. It's almost 2 years that I gave birth to a healthy baby boy. He always been so busy exploring the things around him that make me so busy too. I'm just so thankful to GOD that Matthew is smart and healthy baby boy. I cant even wait he will go to school,he is so smart that he can easily catch what he heard.But for no I am enjoying his company and I will treasure the moments with him. I love him so much.

Puto(Steamed Rice Muffins)

2 cups rice flour
1 tablespoon baking powder
¾ cup sugar
a pinch of salt
2 cups coconut milk
2 tablesppon water
1 tablespoon anise extract, (optional)

Blend flour, sugar, salt, and baking powder. Add milk and water, and anise extract, if using, mix until smooth. Fill prepared cups 2/3 full and steam in rapidly boiling water for 20 minutes. Serve hot with butter or shredded fresh coconut.

Puto Cheese

I was craving for puto cheese so decide to make some today. It was turn good and yummy. Very simple recipe that you family surely like and love. Enjoy.

4 cups all-purpose flour
2 cups white sugar
1 tablespoon baking powder
6 eggs
1 (12 fluid ounce) can evaporated milk
1 1/2 cups water
2 1/4 cups Edam cheese, shredded

DIRECTIONS
Grease small cake, puto molds, or ramekins for use in a steamer. Mix the flour, sugar, and baking powder together in a bowl. In a separate, large bowl, scramble the eggs with the evaporated milk and water. Fold the dry mixture into the eggs until evenly blended. Fill the prepared molds 2/3 of the way up with the batter and top with shredded cheese.
Fill a wok or a sauce pan that will hold a steamer basket with a few inches of water. Bring the water to a boil over medium-high heat. Place the molds into a steamer basket and place over the boiling water and cover.
Steam until a toothpick inserted in the center of one of the putos comes out clean, about 30 minutes. Cool on a wire rack and serve warm or at room temperature.

Its been a while my last time I ate pandesal back in the Philippines. I am craving on it so badly. I wishe I can bake it now but unfortunately I dont have a yeast. Well, My first time to do on my list tomorrow will be going to buy the yeast and bake the pandesal. I will post the result tomorrow. For now I need to go to bed and I need to watch my son temperature he is not feeling well. Goodnight everyone.

After Hurricane Ike

After the hurricane ike hit our area we are doing well and no damages on our properties as well.Only limbs on the yard. We are so thankful that GOD really watching over us. It was the horrible moment in my life specially that Im worried about my son.The house was shaking because of the strong wind.The electricity was out and we decided to escape texas for a while to kentucky.We been staying at my sister until the electricity back last friday night.I cant imagine how Ike brought disaster and able to take the living of some people. I pray they can move on and will start a new life after the devastating hurricane Ike.

Shrimp Skewers

I do love to cook for my husband so I'm trying my best to serve him a healthy and delicious meal.So far he love the food I cook and make me proud myself. One dish that he love most are the one I cooked lastnight for our dinner. Its really so simple and easy dish. I always watch Life Pinoy Style by Chef Ron Bilaro on TFC and that show help me alot to improve my cooking.

So heres the ingredients and cooking intructions in case you want to try this recipe.

1/4 cup lemon juice
2 tsp. chili powder
1/2 tsp. salt
1/8 tsp. cayenne pepper (optional if you want them hot)
3 garlic cloves, minced
1 medium sized onion
1 lb. shrimp, (tails on)
2 tbsp. butter
Mix first 6 ingredients in a shallow dish. Marinate shrimp for one hour. Place on skewers and grill until pink and cooked through.

Kemah Boardwalk Weekend

Last Saturday my family went to kemah boardwalk to have fun. I am so excited when we are eating at aquarium restaurant that I thought the whole restaurant was made of aquarium,that we are like under the ocean but its not really what I expected. It just an ordinary building with some aquarium on the wall etc..The place are nice and expensive..lol..We rode the train and we seen the whole place it was really fun. And we are surprised that my baby not scared when the train passed under the tunnel so dark and there where alot of scarry noise and stuff..While the other kids are crying to death.I guess my son is a brave baby boy.

I woke up 7am this morning to feed my baby boy but after feeding him decided to go back to bed and woke up almost 11am, I don't know but I'm so tired even I was asleep good last night. I just heard my son screaming moooooooooom up his head on his crib looking at me..lol..He always doing that to wake me up. I was starving to death so I just cook me a bacon and egg for lunch. Lemon Pepper Tilapia

Just want to share you guys a recipe that so easy to prepare. My husband and I really love this recipe.

Tilapia Fillets

Lemon pepper salt

olive oil

Sprinkle lemon pepper to the fish fillets.Make sure it is balance in both side.

Then fry it with the olive oil or vegetable oil or corn oil.I like the taste better if I used olive oil.Serve with hot rice.

1. My priority: taking care my son especially that he is not feeling well because he is teething.

4.Vacuum the carpet
5.Mop the tiles
6.Clean the bathroom
7.Free dust the furniture and appliances.
8.Washing dishes by hand( don't have dishwasher save to electricity)lol
9.Preparing for our dinner tonight
10. The rest are monkey business(internet,tv and sleeping) :-)

Sweet Corn

Back in the Philippines one of my favorite food is corn since we also planted corns in our yard.Here in the USA if fresh corn so expensive I just bought sweet corn kernel in can for side dish. Last Saturday, we went to grocery store for grocery shopping I got 6 pieces of fresh corn and it more cheaper this time. Lastnight, I boiled them for our dinner and its really so sweet and good. I ate 4 of them..lol..

Substitute to Champorado

Yesterday morning I was craving for champorado but too lazy to make it out of rice. So like before I was just make oatmeal champorado. Bring oatmeal and milk to boil for 5 mins or more then mix choco powder. Easiest and yummy breakfast.

The day He came to my life

It was Febuary 28,2008 @ 10:16 am. A precious baby boy was born by C-section @ Women Hospitals in Conroe,TX. He is 8 lbs and 11 onces and 21.1 inches long. He is such a healthy baby boy that Im so much thankful to GOD. Even on that day I was fighting death after I gave birth to him but GOD love us both that HE saved my life to be with my new born forever. My son is a gift from heaven that can be treasure in everybody's heart especially daddy and mommy. We love him so much.
